Chicken Pizza

Ingredients:

  • Pizza base
  • Tomato sauce 100 ml
  • Onions(big) 3
  • Tomato 3
  • Capsicum 3
  • Chicken 125 grams
  • Cheese 20 gm
  • Pepper powder 1/2 tsp.
  • Oil

Method:

  • Boil the chicken in water with pepper and oil and after it is cooked make it into small bits.
  • Cut or shred the vegetables into desired size and shape.
  • Spread tomato sauce on the harder surface of pizza base. To this add onions, capsicum and tomato. Over this add the chicken pieces.
  • Top this with the onions, capsicum, tomato and the grated cheese.
  • Allow it to cook in a microwave/oven for 3-5 minutes.
  • Variation: Chicken sausages can be used in the place of chicken.

Seafood Pizza

Ingredients:

  • 1 pack of whole wheat pita bread
  • 1/2 cup scallops
  • 1/2 lb. shrimps (peeled and divined)
  • Roasted garlic cloves (as per requirement)
  • 1/2 red onion sliced
  • A bunch of cilantro roughly chopped
  • Minced garlic
  • 1 tomato thinly sliced
  • Alfredo sauce ( i got lazy so mine was store-bought)
  • Butter
  • Parmesan cheese
  • Mozzarella shredded cheese (fresh mozzarella is definitely better)
  • Salt and pepper to taste

Method:

  • Pre heat oven up to 450 degrees.
  • Then put the pizza stone at the lower rack of the oven and leave it to heat (to make the pizza crispier, hotter the better)
  • At this moment, also make your sauce pan heated with a dallop of butter and minced garlic and let it get sautéed for few minutes
  • Then put in the shrimps and scallops. Sauté until cooked.
  • Again place pan back on the stove and then pour butter to sauté red onions until it’s caramelized
  • Upon caramelizing, put the pan aside
  • After the stones get hot, start prepping the pitas by sprinkling some olive oil on both sides of the pitas so that they wouldn’t stick to the stones.
  • Then make a layer with mozzarella cheese, alfredo sauce, onions, tomatoes, shrimps and scallops, cilantro over the pizza and again topping with more mozzarella and parmesean cheese.
  • After preparation, put it carefully on the stone and bake it for 6-10 min. or when the cheese start melting and the pitas turn crispy and golden.
  • Serve Hot.

White Pizza

Ingredients:

  • 1.5 cups warm water, divided
  • 1 T active dry yeast
  • 1 t honey
  • 2 cups flour (I used all white as I had no wheat)
  • 1 c whole wheat flour
  • ¾ t coarse salt
  • 2 t olive oil

Method:

  • Stir yeast into ½ cup warm water. Add honey and let stand 5 minutes.
  • Place flours in food processor fitted with a metal blade.
  • Add salt and pulse. Pour in yeast mixture, remaining water, and oil. Process 1 minute until dough comes together.
  • Let rest 20 minutes before rolling out.
  • White Pizza Sauce

  • 1 cup ranch dressing
  • 1 cup mayo
  • 1 cup Parmesan cheese
  • Mix all together and top on crust.
  • I baked my crust for about 5-10 minutes then topped with white sauce, shredded chicken, mushrooms, broccoli, and cheese.

Italian Pizza

Ingredients:

  • Prepare the dough by mixing together (also with the aid of a bread a machine)
  • 1 and ½ cup of warm water
  • 1 and ½ tea spoon of salt
  • 1 and ½ tea spoon of yeast
  • 3 cups of flour

Method:

  • Wait about 2 hours to rise and you have your pizza dough
  • Since I assume most of us do not have a wood firebrick oven in the house. The next best thing is the use of a pizza stone in a normal oven. I have my pizza stone for over 10 years and I use it to make nice crusty breads (bread does not cook well in a bread machine).
  • The pizza stone will retain heat from the oven and cook the pizza fast without the need for fattening oils etc – So when baking you don’t need a greased pan. Just put the dough on the pizza stone. The crust w ill come out dry and ‘crusty’ ( The pizza stone can be used to make excellent bread as well )
  • Ok use either good canned tomatoes (Just tomatoes – not any pre-prepared sauces) or fresh tomatoes if they are available – You can even mix them together – put them in a food processor and chop them.
  • Put the mozzarella in the food processor so you will be able to spread it over the pizza.
  • Now use the rolling pin to make a thin layer of pizza crust. What I do now, it sounds a little strange but it helps a lot, put the raw pizza (the pizza crust that you just rolled out) by itself in the oven for just 1 minute (Reason: if the crust is too soft is very difficult to add tomatoes etc without ruining it) – After 1 minute remove the pizza dough and apply the tomatoes, mozzarella and fresh basil.
  • Place the pizza in the oven for about 5 / 6 minutes ’till all the mozzarella is nicely melted. Take it out of the oven and serve. What is nice about this pizza is the unexpected different authentic Italian taste – also there are no greases oils or addictives of any type ( like powder garlic so popular in the Italian American food tradition but never used in Italy – so you are not allowed to use it).
  • Anyway, after you practice with a few pizzas I might even give you the permission to try it with different toppings.
